Besides being high in lutein, beta-carotene and gamma-tocopherol, pistachios are just plain FANTASTIC to us!. We DE shelled them and couldn't get them into our Fudge quick enough. As If that was enough, "no way Jose", we took Pistachio extract and mixed it into our creamy fudge giving it the pretty light green coloring. Take it from us, it's another way “Going Green” is good for all of us!
